2 tbsp Kursat’s Caramelised Onion

500ml beef or vegetable stock

1 tbsp butter

1 tbsp olive oil

1 tsp fresh thyme leaves (or ½ tsp dried)

1 tsp balsamic vinegar (optional, to enhance sweetness)

Salt and black pepper to taste

2 slices crusty baguette or bread

50g Gruyère or Emmental cheese, grated
- 1 tbsp flour
Method
- Heat butter and olive oil in a saucepan over medium heat.
Add Kursat’s Caramelised Onion Paste and cook gently for 2–3 minutes. - Sprinkle in the flour and stir for 1–2 minutes to remove the raw taste.

Pour in the stock, thyme, and balsamic vinegar.
Simmer for 10–12 minutes to blend flavours. Season with salt and pepper to taste. - Preheat your grill/broiler.
Place baguette slices on a baking tray and toast lightly. - Ladle soup into oven-safe bowls. Top each with a slice of toasted bread and a generous sprinkle of cheese.
- Grill under high heat for 2–4 minutes until cheese is melted and slightly golden.
- Remove from the oven carefully. Serve immediately.
