A quick and easy take on Turkish lahmacun using flatbread and Kursat’s Ezme Paste. The Ezme is mixed with minced meat, a little salt and water to create a rich, flavourful topping that spreads thinly over the bread before baking until crisp around the edges and juicy in the centre.
Ingredients (Makes 2)
2 flatbreads or large thin flatbreads
150g minced lamb or beef
3 tbsp Kursat’s Ezme Paste
½ tsp salt
1–2 tbsp water
Method
Make the lahmacun mixture
Add the minced meat, Kursat’s Ezme Paste and salt to a bowl. Mix thoroughly until evenly combined. Add the water a little at a time until the mixture becomes soft and spreadable.
Spread over the flatbread
Place the flatbreads on a baking tray. Divide the mixture between them and spread into a very thin, even layer, right to the edges of the bread.
Bake
Bake in a preheated oven at 220°C for approximately 8–10 minutes, or until the meat is fully cooked and the edges of the flatbread are crisp. Alternatively, air fry at 200°C for approximately 6–8 minutes, depending on the air fryer.
Serve
Serve hot with fresh parsley, lemon wedges and sliced onion, or roll up and enjoy straight away.
