A quick and flavourful burrito made with Kursat’s Enchilada Paste, seasoned beef, rice and melted cheese. The paste brings roasted chilli, spices and depth to the filling without needing a long list of ingredients.
Ingredients (Makes 2)
2 large flour tortillas
200g minced beef
3 tbsp Kursat’s Enchilada Paste
100g cooked rice
80g grated cheddar cheese
3 tbsp of Kursat's Caramelised Onion
1 tbsp oil
Salt to taste
Method
Cook the beef
Heat the oil in a frying pan over medium-high heat. Add the caramelised onion and cook for 2–3 minutes. Add the minced beef and cook until browned.
Add the Enchilada Paste
Stir in the Kursat’s Enchilada Paste and cook for 1–2 minutes. Add a splash of water if needed to loosen the mixture. Season with a little salt.
Build the burritos
Warm the tortillas briefly so they become flexible. Divide the rice and beef mixture between the tortillas, then top with grated cheese.
Roll and toast
Fold in the sides and roll tightly into burritos. Place seam-side down in a dry frying pan and toast for 1–2 minutes on each side until golden and the cheese has melted.
Serve
Serve hot with fresh coriander, sliced avocado, lime or your favourite salsa.
